Due to the availability of cheap calories from products such as corn and dairy, along with methods of processing to lower costs and increase shelf-life, people are suffering from a multitude of health problems including diabetes, obesity, heart conditions, and hypertension. In addition, concerns over food containing genetically modified crops and animals along with the previous concerns have resulted in society becoming much more conscious and confused about its diet than it has ever been before.
East Carolina University offers a Master of Science in Nutrition for students seeking careers in the fields of nutrition and dietetics. Nutritionists and dietitians focus on improving people’s health by improving their diets. Professionals learn about their patients' bodies, medical conditions, activities, and eating habits to come up with nutritional plans and exercise plans to help their patients improve their health and nutritional habits.
Students in the program will study a curriculum with classes in human nutrition in physiology and metabolism, biostatistics for health professionals, and methods in nutrition research among others. In order to complete the program, students will be required to submit a master’s thesis and take part in a nutritional seminar program to demonstrate their mastery of the topic.
